Mom's Pfeffernuesse
Mom made these great pfeffernuesse cookies for one of her holiday give-aways.

One thing I'm thinking of doing is putting up a selection from my mother's recipe file - starting with some of my old favorites. They're hand written on 3 x 5 cards and I haven't decided whether to scan them or transcribe them. Scanning might preserve their character better. Let's try one...

Beat egg whites 10 min.; beat egg yolks 5 min. seperately then together; add sug. and beat again. Add spices & soda. Sift flour, b. pow & salt. Add to egg mix. Add raisins, citron nuts and more flour to make a stiff dough. Roll into balls the size of hickory nut. Bake 10-12 min. in med oven 350deg. (Grease cooky sheet) To roll; put 1/2 c. flour on a plate or pie pan. Drop bits of dough into flour with 2 teas. Pick up ea. pc. and roll between palms of hands. |
